Instructions
Cut the soaked and desalted baccalà into medium-sized chunks, keeping the skin on.
Heat the peanut oil in a large, deep skillet over medium-high heat until hot.
Pat the baccalà pieces dry thoroughly with paper towels.
Lightly dredge each piece in durum wheat semolina, shaking off any excess.
Fry the baccalà in small batches, turning occasionally, until golden and crisp on all sides.
Remove and drain on paper towels.
