There’s something magical about the smell of freshly baked bread filling your home. This Rustic Italian Bread is the kind of recipe that has been passed down through generations, kneaded by hand, and shared around the family table.

In my Nonna’s kitchen, bread wasn’t just food — it was an act of love. She would always say, “Il pane porta gioia” — “Bread brings joy.” And she was right. From soups and stews to pasta dinners, a warm loaf was always there, ready to be broken and shared.

This recipe uses simple, wholesome ingredients, but the real secret lies in patience: the rise, the knead, the gentle shaping — all worth it when you slice into that golden, crusty loaf with a tender, airy center.

Ingredients

  • 2 packets active dry yeast (about 4½ tsp)

  • 2¼ cups warm water (divided, about 110°F)

  • 1½ tsp salt

  • 6 cups all-purpose flour (sifted, divided)


Instructions

Step 1 – Activate the Yeast

In a small bowl, combine yeast with ¼ cup warm water. Let sit 10–15 minutes until foamy.

Step 2 – Make the Dough

In a large mixing bowl, add the remaining warm water and salt. Stir in 3 cups of flour.
Add the yeast mixture and stir until well combined.
Gradually add half of the remaining flour, mixing with a wooden spoon until smooth.
Continue adding flour as needed to form a soft dough.

Step 3 – Knead

Transfer the dough to a lightly floured surface. Let rest 10 minutes.
Knead for 8–10 minutes, pushing with the heels of your hands, folding, and repeating until smooth and elastic.

Step 4 – First Rise

Shape dough into a ball. Place in a greased bowl, turning to coat.
Cover with plastic wrap and let rise in a warm spot for about 2 hours, or until doubled in size.

Step 5 – Shape the Loaves

Punch down dough and knead lightly for 2 minutes.
Divide into 2 equal pieces. Shape each into a loaf (round or oblong) and place on a greased baking sheet.
Cover loosely with a clean towel and let rise again until doubled, about 45 minutes.

Step 6 – Bake

Preheat oven to 425°F (220°C). Bake for 10 minutes, then reduce heat to 350°F (175°C) and bake for 20–25 minutes more, until golden brown.
For a crustier loaf, place a shallow pan of boiling water in the oven during baking.

Step 7 – Cool & Serve

Cool on a wire rack before slicing. Serve warm with olive oil, butter, or alongside your favorite Italian dish.


Storage

  • Store in a bread bag or wrapped in a clean towel at room temperature for up to 2 days.

  • Freeze for up to 3 months.
