CALABRIAN ONION & TOMATO SALAD

There are summer recipes that barely feel like recipes at all — just a few beautiful ingredients combined exactly the way generations before us have always done.

This Calabrian Tomato and Red Onion Salad is one of them.

Firm tomatoes, sweet red onions, garlic, fragrant dried oregano, extra virgin olive oil, and, if you like a little Calabrian fire, fresh hot pepper come together in one incredibly simple dish.

The secret is letting the salad rest for a few minutes before serving. The salt draws out the tomato juices, which mingle with the olive oil, oregano, garlic, and onion to create the most delicious dressing at the bottom of the bowl.

And that juice should never go to waste.

In an Italian home, this is exactly when a good piece of crusty bread appears for fare la scarpetta — soaking up every last drop.

Cooking Times & Servings

  • Prep Time: 15 minutes
  • Resting Time: 10–15 minutes
  • Total Time: 25–30 minutes
  • Servings: 4–6
  • Difficulty: Easy
  • Cuisine: Italian, Calabrian
  • Course: Salad, Side Dish, Light Lunch

Ingredients

  • 1 large sweet red onion, preferably Tropea-style
  • 1 lb (450 g) firm tomatoes, plum tomatoes or round salad tomatoes
  • 2 cloves garlic, thinly sliced
  • 1 teaspoon dried oregano, preferably Mediterranean or Calabrian oregano
  • 1 small fresh red chili pepper, finely chopped, optional
  • 1½–2 teaspoons kosher salt, or to taste
  • 3 tablespoons extra virgin olive oil

Instructions

1. Prepare the Onion

Cut the red onion in half, peel it, and slice it very thinly.

Place the sliced onion in a bowl of cold water and allow it to soak for about 5–10 minutes.

This helps soften the sharpness of the raw onion while keeping its sweetness and crunch.

Drain thoroughly and set aside.

2. Cut the Tomatoes

Remove the cores from the tomatoes.

If using plum tomatoes, slice them lengthwise into halves and then cut each half into wedges.

If using round tomatoes, cut them through the stem and slice them into generous wedges.

Transfer the tomatoes to a large glass, ceramic, or stainless-steel bowl.

3. Add the Aromatics

Add the drained red onion and sliced garlic to the tomatoes.

Crush the dried oregano lightly between your fingers as you sprinkle it over the salad. This releases its oils and intensifies its aroma.

Add the chopped fresh chili pepper if using.

4. Season the Salad

Sprinkle with the salt and drizzle generously with extra virgin olive oil.

Toss everything together carefully so the tomato wedges remain intact.

Taste and adjust the salt or olive oil if necessary.

5. Let It Rest

Allow the salad to stand at room temperature for 10–15 minutes before serving.

This step is important.

The salt will gently pull some of the juice from the tomatoes, creating a flavorful mixture of tomato juice, olive oil, oregano, garlic, and onion at the bottom of the bowl.

Serve with plenty of crusty Italian bread for soaking it up.

Nonna’s Tips for the Best Tomato Salad

Choose Firm Tomatoes

For a traditional Calabrian-style salad, the tomatoes shouldn’t be overly soft.

Choose tomatoes that are firm and flavorful, even slightly underripe. They hold their shape better and give the salad the texture traditionally preferred in Southern Italy.

Use Sweet Red Onion

If you can find Tropea onions, use them.

These famous Calabrian red onions are naturally sweet and mild and are especially good when eaten raw.

Sweet red onions or Italian-style red onions are excellent substitutes.

Don’t Skip the Oregano

Dried oregano is one of the defining flavors of this salad.

Traditional Calabrian oregano is especially aromatic and has a much more intense fragrance than many supermarket varieties.

Rub it between your fingers before adding it to release the aroma.

Let the Tomatoes Make Their Own Dressing

Don’t pour away the liquid that collects at the bottom of the bowl.

That mixture of tomato juice, olive oil, salt, garlic, and oregano may be the best part of the entire dish.

Grab some bread and enjoy it the Italian way.

Make It Spicy

Calabrian cooking rarely shies away from a little heat.

Add finely chopped fresh red chili pepper or a small amount of crushed Calabrian chili for a more traditional spicy version.

You can leave it out completely if you prefer a milder salad.

Add Tuna for an Easy Summer Lunch

Turn this simple salad into a light meal by adding:

  • 1 jar or can of high-quality Italian tuna packed in olive oil

Drain the tuna lightly and fold it gently into the salad just before serving.

The combination of tomato, onion, oregano, tuna, and olive oil is especially popular during hot Italian summers.

What to Serve with Calabrian Tomato Salad

This salad is wonderful alongside:

  • Grilled Italian sausages
  • Grilled chicken
  • Grilled or roasted fish
  • Fresh mozzarella
  • Burrata
  • Frittata
  • Rustic Italian bread
  • Focaccia
  • Roasted potatoes
  • Simple pasta dishes

It also makes a perfect light summer lunch with nothing more than bread and cheese.

Storage

This salad is best eaten shortly after it is prepared.

If necessary, store leftovers in an airtight container in the refrigerator for up to 1 day.

Bring the salad back toward room temperature before serving so the olive oil and tomato flavors can fully develop again.

The tomatoes will soften considerably after refrigeration, so freshly prepared is always best.

A Taste of Calabria

Some of the most memorable Italian dishes come from knowing what not to add.

No complicated dressing.

No vinegar is necessary.

No long list of ingredients.

Just tomatoes, sweet onion, garlic, oregano, olive oil, salt, and perhaps a little peperoncino.

It’s simple, rustic food built around ingredients at their seasonal best — exactly the kind of recipe that belongs on a Southern Italian summer table.

And whatever you do, don’t forget the bread.

You’re going to want every drop of that tomato juice.
