Ingredients
2.2 pounds potatoes
1 cup grated Parmigiano Reggiano
salt, to taste
black pepper, to taste
4 large eggs
Instructions
Wash the potatoes well and boil them in plenty of water until fork tender.
Drain the potatoes, let them cool slightly, then peel them.
Mash the potatoes in a large bowl using a potato masher.
Add the grated Parmigiano Reggiano, salt, and black pepper.
Mix well until the mixture is smooth and evenly combined.
Divide the mixture into 4 equal portions and shape them into balls.
Place the potato balls in the air fryer basket, leaving a little space between them.
Gently press down the center of each one with the back of a spoon to create a well deep enough to hold an egg.
Air fry at 350°F for 20 minutes.
Open the air fryer and carefully crack one whole egg into the center of each potato cake.
Add another small pinch of salt on top of each egg.
Cook again at 350°F for 10 more minutes, or until the eggs are cooked to your liking.
Serve warm.
