- 65 g (¼ cup + 1 tbsp) milk
For the Almond Filling
- 300 g (2 ½ cups) almond flour
- 300 g (2 ½ cups) icing sugar
- 75 g (⅓ cup) orange or apricot marmalade
- 75 g (5 tbsp) butter, softened
- 25 g (2 tbsp) glucose (or honey)
- 4 tbsp water (adjust as needed)
- 3 drops bitter almond essence
- Green food coloring, as desired
For the Chocolate Coating
- 100 g (3.5 oz) dark chocolate
- 30 g (2 tbsp) butter
Instructions
Step 1: Prepare the Whipped Shortcrust Pastry
- Soften the butter at room temperature for about an hour.
- In a stand mixer or with a hand whisk, beat the butter and powdered sugar until light and fluffy. Gradually add the milk while continuing to whisk.
- Sift in the flour and mix until the dough is smooth and velvety.
- Transfer the dough to a piping bag fitted with a 7-mm star nozzle. Pipe sticks about 6 cm (2.5 inches) long and 2.5 cm (1 inch) wide onto a baking sheet lined with parchment paper. You can also create horseshoe shapes.
- Bake in a preheated oven at 180°C (350°F) in static mode for 15 minutes or until the bottoms are lightly golden.
- Let the cookies cool completely before assembling.

- In a mixing bowl, combine almond flour, icing sugar, marmalade, glucose, water, green food coloring, and bitter almond essence. Mix well using a stand mixer or a wooden spoon.
