6 large eggs
½ cup (50 g) grated Parmigiano Reggiano
2 tbsp extra virgin olive oil

Freshly ground black pepper, to taste

1. Prepare the vegetables
Finely chop the onion and sauté in 1 tbsp olive oil over medium heat until soft (about 5 minutes).
Meanwhile, peel and dice the potatoes evenly. Trim and cut the green beans.
Blanch the potatoes and green beans together in salted boiling water for 8 minutes. Drain and let cool.
2. Make the frittata mixture
In a large bowl, beat the eggs.
Add sautéed onions, cooled potatoes, green beans, grated Parmigiano, salt, and pepper. Mix well.
3. Cook the frittata
Heat the remaining 1 tbsp olive oil in a non-stick pan.
