Recipe for Homemade Torrone
⏱️ Cooking Times & Servings
Preparation & setting time: about 8 hours
Active cooking time: 30 minutes
Servings: 10–12 pieces
🛒 Ingredients
2 cups mixed nuts (pistachios, hazelnuts, almonds, peanuts)
⅔ cup honey
½ cup granulated sugar
1 large egg white
Zest of 1 orange
1 teaspoon vanilla extract
Olive oil, for greasing
👩🍳 Instructions – Step by Step
Step 1 – Toast the Nuts
Preheat the oven to 330°F (165°C). Spread the peeled nuts on a baking sheet and toast for 10–12 minutes, stirring once. Set aside to cool slightly.

Step 2 – Prepare the Pan
Line a rectangular pan (about 9×7 inches) with parchment paper and lightly grease it with olive oil.

Step 3 – Cook the Honey Syrup
Pour the honey into a heavy-bottomed saucepan and bring to a gentle boil. Add the sugar and cook over medium heat until the syrup reaches 250°F (120°C).
Without a thermometer, simmer for about 8 minutes until thick and bubbling.

Step 4 – Whip the Egg White
Beat the egg white until stiff peaks form. Slowly pour the hot syrup into the egg white in a thin stream while continuing to whisk. The mixture will become thick, glossy, and pale. Add the vanilla extract.

Step 5 – Add Orange Zest
Grate the orange zest directly into the mixture. Make sure the orange is well washed and briefly rinsed with boiling water before zesting.

Step 6 – Fold in the Nuts
Add the toasted nuts and mix thoroughly until evenly distributed.

Step 7 – Shape the Torrone
Transfer the mixture into the prepared pan. Press and compact it firmly to remove air pockets.

Step 8 – Smooth the Surface
Cover with another sheet of parchment paper and press gently to level the top.

Step 9 – Rest & Set
Place the pan in a cool, dry place for 6–8 hours, until fully set.

Step 10 – Cut & Serve
Cut into rectangles using a sharp knife. For easier slicing, refrigerate briefly before cutting.
If using edible rice paper instead of parchment, the torrone can be cut and eaten with the paper attached.
💡 Tips & Tricks
Use raw, unsalted nuts for the most authentic flavor.
Pistachios add color, but almonds give classic structure—balance both.
Torrone keeps well wrapped in parchment paper for up to 2 weeks in the refrigerator.
Always cut with a warm knife for clean edges.
