Insalata di Rinforzo (NEAPOLITAN HOLIDAY SALAD)

Insalata di Rinforzo is a beloved Neapolitan classic, traditionally served on Christmas Eve but perfect year-round as a bold, flavorful side dish.

Made with tender cauliflower, olives, anchovies, capers, and vinegar, this salad is all about contrast: crunchy and soft, briny and fresh, simple yet deeply satisfying.

Its name—“rinforzo,” meaning reinforcement—comes from the tradition of “reinforcing” the dish with whatever flavorful ingredients were on hand during the holidays, turning a humble vegetable into something festive and memorable.

  3. In a large mixing bowl, combine the cooled cauliflower with olives, pickled peppers, capers, and anchovies.

Tips & Tricks (4 Nonna-Approved Tips)

  • Use fresh cauliflower: It’s the star of the dish—freshness makes all the difference.

  • Don’t overcook: The cauliflower should be tender but still hold its shape.

  • Make it ahead: This salad tastes even better after resting in the fridge.

  • Quality olive oil matters: A good extra virgin olive oil enhances every ingredient without overpowering them.

Why Extra Virgin Olive Oil Is Essential

Extra virgin olive oil is what ties all the bold flavors together. It adds richness, balances the acidity of the vinegar, and gives the salad its signature glossy finish.
Use it sparingly, and always add a final drizzle right before serving for maximum aroma and flavor.
