INGREDIENTS:

  • 4 pork sausages
  • 4 medium potatoes (about 1 1/2 lbs), peeled and cut into 1/2-inch cubes
  • 2 large bell peppers (1 red, 1 yellow), cut into strips
  • 1 fresh sage leaf
  • 1 sprig fresh rosemary (or 1/2 tsp dried rosemary)
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/4 cup dry white wine (optional)
  • Salt and pepper to taste

 

INSTRUCTIONS:

Prepare the vegetables:

  • Peel the potatoes and cut them into half-inch cubes.
  • Wash peppers, remove seeds and inner membranes, and slice into thin strips.

Cook the sausages:

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the sausages and brown them on all sides, about 5 minutes. Remove from skillet and set aside.

Cook the potatoes:

  • In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1 minute until fragrant.
  • Add the diced potatoes, sage leaves, and rosemary sprig. Cook over medium heat for 10 minutes, stirring occasionally, until the potatoes begin to soften and brown.

Add the peppers and sausages:

  • Stir the peppers into the pan with the potatoes and mix well. Cook for another 5 minutes.
  • Return the sausages to the skillet, pour in the white wine (if using) and cover. Cook over low heat for 10 minutes, stirring occasionally.

Season and serve:

  • Season the dish with salt and pepper to taste. Remove the sage leaves and rosemary sprig before serving.
  • Serve hot, garnished with fresh rosemary if desired.

 

Tips:

  • Crispier Potatoes: For extra crispy potatoes, cook them longer before adding the peppers.
  • Oven Option: For a hands-off approach, combine all ingredients in a baking dish, drizzle with olive oil, and roast at 400°F for 35–40 minutes, stirring halfway through.
  • Lighter Option: Use chicken or turkey sausages for a leaner version of the dish.
