LENTIL SOUP NEAPOLITAN-STYLE

Warm, comforting, and deeply satisfying—this Neapolitan-style lentil soup is the kind of simple winter meal that tastes like home.

In my mom’s version, tender lentils simmer with sweet cherry tomatoes, then everything gets boosted by a quick garlic-and-parsley soffritto that perfumes the whole pot.

It’s hearty, naturally rich in iron and vitamins, and ready fast—perfect for busy weeknights when you want something nourishing without fuss.

Ingredients

For the soup:

  • 1 cup small dark dried lentils (brown or green), rinsed (see note for canned)

  • 1 to 1 1/2 cups cherry or grape tomatoes, halved (about 10–12 tomatoes)

  • 2 garlic cloves, lightly smashed

  • 3 tbsp extra-virgin olive oil, plus more for serving

  • 1/2 cup fresh flat-leaf parsley, finely chopped (plus extra for garnish)
    (or substitute 1–2 tsp chopped rosemary)

  • 3 to 4 cups water, divided (more as needed)

  • 1 to 1 1/4 tsp kosher salt (start with 1 tsp and adjust)

Optional for serving (highly recommended):

  • Toasted bread slices or croutons

Optional “Pasta e Lenticchie” add-in:

  • 1/2 cup small pasta (ditalini, tubetti, or other short pasta)

  • Extra 1 to 2 cups water, as needed


Instructions

1) Parboil the lentils (quick softening)

  1. Add the rinsed dried lentils to a medium pot and cover with about 3 cups water.

  2. Bring to a gentle boil, then lower to a steady simmer, cover, and cook 15–20 minutes, until the lentils are tender but not mushy.

  3. Drain and set aside.

If using canned lentils: skip this step (see Tips).

2) Make the soffritto + tomatoes

  1. In the same pot (or a second pot), warm 3 tbsp olive oil over medium heat.

  2. Add the smashed garlic and sauté about 1 minute, until lightly golden.

  3. Add the halved tomatoes and cook 3–4 minutes, stirring, until they soften and release juices.

3) Finish the soup

  1. Add the drained lentils to the pot and stir well.

  2. Add most of the chopped parsley, saving a little for garnish.

  3. Cook 1 minute to let the lentils absorb the flavors.

  4. Pour in 1 cup water (more if you like it looser), bring back to a simmer, cover, and cook 5–8 minutes.

  5. Taste and season with salt. Remove garlic cloves if you prefer (optional).

4) Serve

Ladle into bowls and finish with:

  • a drizzle of extra-virgin olive oil

  • a sprinkle of fresh parsley

  • toasted bread on the side (or right on top!)


Tips & Tricks

  • Dried vs. canned lentils:

    • Dried gives the best flavor and texture.

    • If using canned: use 2 cans (15 oz each) lentils, drained and rinsed. Simmer them with the tomato-soffritto and add 1 to 1 1/2 cups water as needed, cooking about 10 minutes total.

  • Want it thicker? Simmer uncovered a few extra minutes.

  • Want it soupier? Add water a little at a time until it’s perfect for you.

  • Kid-friendly “creamy” version: Blend part (or all) of the soup with an immersion blender to make a velvety lentil cream soup.

  • Make it “Pasta e Lenticchie”: Add 1–2 cups water to loosen the soup, stir in 1/2 cup small pasta, and simmer until the pasta is tender, stirring often.


Storage

  • Fridge: Store in an airtight container for up to 3 days. Reheat on the stove with a splash of water.

  • Freezer: Freeze in freezer-safe containers for up to 2 months. Thaw overnight in the fridge, then reheat gently.
