2/3 cup + 1 teaspoon granulated sugar
1 tablespoon + 2 1/2 teaspoons ground ginger
2 3/4 teaspoons ground cinnamon
1 large egg, room temperature
1 large egg yolk, room temperature
Powdered sugar, for sifting (optional)
Limoncello Curd
3 large egg yolks
1 large egg
1/2 cup granulated sugar
1/2 cup fresh lemon juice
2 tablespoons lemon zest (about 2 lemons)
1/4 cup limoncello
6 tablespoons unsalted butter, cut into pieces
Instructions
1) Make the Limoncello Curd
In a medium heatproof bowl, whisk together the egg yolks, whole egg, and sugar until smooth.
Whisk in the lemon juice, lemon zest, and limoncello.
Place the bowl over a saucepan with 1–2 inches of gently simmering water (double boiler). Do not let the water touch the bowl.
Stir constantly with a whisk or silicone spatula until thick enough to coat the back of a spoon, about 8–12 minutes.
Remove from heat and whisk in the butter a few pieces at a time until smooth.
Strain through a fine-mesh sieve into a jar or bowl (recommended for extra-smooth curd).
Cover and chill until set, at least 1 hour (best: 2 hours).
2) Make the Cookies
Preheat oven to 350°F. Line 2 baking sheets with parchment paper or silicone mats.
In a small bowl, whisk together flour, ginger, and cinnamon.
In a large bowl, beat butter and sugar on medium speed until creamy, about 2 minutes.
Add the egg and egg yolk and mix until combined. Scrape down the bowl as needed.
Add the dry ingredients and mix just until the dough comes together. Don’t overmix.
Roll dough into about 1 tablespoon balls (25 g if weighing) and place on baking sheets.
Press an indentation into the center using the back of a 1-teaspoon measuring spoon (or your finger).
Bake 11–12 minutes, until edges are lightly golden but centers are still soft.
Remove from the oven. If the centers puffed up, gently re-press the indent right away.
Immediately fill each cookie with about 1/2 teaspoon chilled limoncello curd.
