MEATBALLS PIZZAIOLA: LIKE A NONNA!

If there is one dish that takes me right back to my childhood Sundays, it’s Meatballs alla Pizzaiola.

In Italy, meatballs are more than just food — they are a symbol of family gatherings, warmth, and tradition.

My grandmother would prepare them in the morning, letting them simmer slowly in a rich tomato sauce until lunchtime.

By noon, the entire house was filled with the irresistible aroma of garlic, oregano, and fresh tomatoes bubbling away on the stove.

What makes this recipe special is the pizzaiola sauce. Inspired by the flavors of pizza — tomato, oregano, garlic, and olive oil — it transforms simple meatballs into a dish that feels both rustic and elegant.

Whether you serve them with pasta, over creamy mashed potatoes, or with crusty bread to soak up the sauce, these meatballs will bring the comforting flavors of Italy straight to your table.

Ingredients

For the Meatballs

  • 1 lb (450 g) ground beef (or half beef, half pork for richer flavor)

  • 1 large egg

  • ½ cup breadcrumbs

  • ½ cup grated Parmigiano Reggiano

  • 2 cloves garlic, minced

  • 2 tbsp fresh parsley, chopped

  • Salt and freshly ground black pepper, to taste

For the Pizzaiola Sauce

  • 3 tbsp extra-virgin olive oil

  • 2 cloves garlic, smashed

  • 1 can (14 oz) crushed tomatoes or tomato purée

  • 1 tsp dried oregano (or 1 tbsp fresh oregano)

  • Salt, to taste

  • Fresh basil leaves (optional, for garnish)


Instructions

Step 1 – Prepare the Meatball Mixture

In a large mixing bowl, combine the ground meat, egg, breadcrumbs, Parmigiano Reggiano, garlic, parsley, salt, and pepper. Mix gently with your hands until just combined. Avoid overmixing, which can make the meatballs tough.

Step 2 – Shape the Meatballs

With slightly wet hands, roll the mixture into golf ball–sized meatballs. Place them on a tray or plate while you heat the pan.

Step 3 – Brown the Meatballs

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs and brown them on all sides. They do not need to be fully cooked at this stage — just golden and sealed. Remove and set aside.

Step 4 – Make the Pizzaiola Sauce

In the same skillet, add 1 more tablespoon of olive oil and the smashed garlic cloves. Let them cook for about 2 minutes until fragrant but not burnt. Add the crushed tomatoes, oregano, and a pinch of salt. Stir and let the sauce simmer gently for 10 minutes.

Step 5 – Simmer the Meatballs in Sauce

Return the browned meatballs to the skillet. Cover with a lid and let them simmer in the pizzaiola sauce for about 20 minutes, stirring occasionally. The sauce will thicken, and the meatballs will cook through while soaking up all the flavors.

Step 6 – Serve

Remove from heat and garnish with fresh basil leaves. Serve hot with crusty bread, pasta, or roasted potatoes. And don’t forget to sprinkle a little extra Parmigiano Reggiano on top!
