½ vanilla bean, split and scraped
250 ml 95° alcohol (or Everclear 190-proof) – 1 cup
250 ml whole milk – 1 cup
250 ml fresh cream (no carrageenan) – 1 cup
250 g sugar – 1 ¼ cups
🥣 Method – Step by Step

Clean and dice the melon (remove seeds and rind).
Place the diced melon in a large glass jar.
Add the halved vanilla bean (scrape seeds in and toss in the pod).
Pour in the alcohol (Everclear or other 95° neutral spirit).
Close the jar and shake well.
Let it macerate for 7 days, shaking the jar daily.

After a week, pour milk, cream, and sugar into a saucepan.
