Marinated Eel, Milanese Style

Introduction

A traditional Christmas Eve dish from Milan, where eel is gently simmered and rested overnight in a sweet-and-sour marinade.

Ingredients

  • 2.2 lb eel, cleaned and cut into 1.5–2 inch pieces

  • 2 large white onions, thinly sliced

  • ⅔ cup white vinegar

  • ¾ cup dry white wine

  • 2 tablespoons sugar

  • 2 bay leaves

  • 6–8 black peppercorns

  • 3–4 tablespoons extra-virgin olive oil

  • Salt to taste


Method

  1. Rinse the eel pieces under cold water, pat dry, and ensure the cavity is clean.

  2. Slice the onions into thin half-moons.

  3. Heat olive oil in a wide skillet over medium heat. Add onions and cook 8–10 minutes until soft.

  4. Add eel pieces skin-side down. Sear 3 minutes, flip, and sear 2 minutes.

  5. Pour in the white wine and let the alcohol evaporate for 20–30 seconds.

  6. Add vinegar, sugar, bay leaves, peppercorns, and salt. Swirl gently.

  7. Cover and simmer on low heat for 20–25 minutes, adding a little water if needed.

  8. Cool completely. Transfer eel and marinade to a glass container and refrigerate overnight.

  9. Serve slightly chilled or at room temperature with some marinade spooned over.



Lombard Savoy Cabbage Rolls (Caponèt di Magro)

Method

  1. Prepare the pasta dough:

  2. Prepare the filling:
    Chop the spinach very finely.

  3. Roll the dough:
    Cut the dough into 3–4 pieces.
    Roll each piece using a pasta machine until thin (setting 6–7).
    Lay each sheet on a lightly floured board.

  4. Form the ravioli:
    Place small mounds of filling (about 1 teaspoon) evenly across the sheet.
    Brush a little water around each mound.
    Lay another sheet of pasta on top, gently press out air pockets, and seal.
    Cut into squares using a ravioli cutter or sharp knife.
    Transfer to a floured tray.

  5. Cook the ravioli:
    Bring a large pot of salted water to a boil.
    Add ravioli and cook 4–5 minutes, or until they float and the pasta is tender.

  6. Prepare the sauce:
    In a large skillet, melt butter with sage leaves over medium heat until fragrant.
