3 tbsp extra-virgin olive oil, divided

Prepare the veggies:
Wash and dry the zucchini. Trim ends and slice into rounds. In a large nonstick pan, heat 1½ tablespoons of olive oil and sauté the chopped onion until soft. Add zucchini, sprinkle with salt, and cook over medium heat for 5–6 minutes. Set aside to cool slightly.Make the egg mixture:
In a large bowl, beat the eggs with salt, pepper, and nutmeg (if using). Stir in the Parmesan cheese.Combine:
Add the cooled zucchini and onion mixture into the eggs. Mix well.Cook the frittata:
In the same pan, heat the remaining 1½ tablespoons of olive oil. Pour in the egg-zucchini mixture. Cover with a lid and cook on low heat for about 10 minutes, until the bottom is set.Flip the frittata:
Place a large flat plate over the pan. Invert the frittata onto the plate, then gently slide it back into the pan to cook the other side. Cook covered for another 8 minutes.Serve:
