INSTRUCTIONS:
Step 1: Prepare the shortcrust pastry.

- Add the beaten egg mixture and mix briefly until the mixture has just come together. Avoid overmixing to maintain a tender crust.
- Shape into a flat disk, wrap in plastic wrap and refrigerate for 1 hour.
Step 2: Roll out the crust and bake it in the dark
- Roll out the cooled dough between two sheets of baking paper to a thickness of about 4-5 mm (⅕ inch).

- In a large bowl, beat the eggs and sugar until combined, without whipping.
