1.75 oz (50 g) homemade bread, crust removed (about 1 cup crumbs)
5.3 oz (150 g) mortadella, finely chopped
3.5 oz (100 g) Italian sausage, casing removed
1 cup (80 g) grated Grana Padano cheese
¾ cup (80 g) grated Pecorino cheese
2 large eggs
3 tbsp chopped fresh parsley
1 garlic clove, finely minced
Wild fennel, to taste (or fennel seeds)
Salt, black pepper, and nutmeg to taste
For breading and frying:
Breadcrumbs, as needed
Peanut oil, for frying

Prepare the bread: Remove crust and crumble the bread in a food processor. Set aside.
Mix the meats: In a large bowl, combine ground beef, sausage, and chopped mortadella.
Add the flavor: Stir in parsley, garlic, nutmeg, wild fennel, salt, and pepper.
Cheese & eggs: Add both cheeses and beaten eggs. Mix well until soft and uniform.
Add the bread: Fold in the crumbled bread. If the mixture is too dry, add another egg.
