Vegetables

  • Carrots: 2 lb 3 oz (1,000 g), peeled and cut into ½-inch (1.25 cm) chunks or coins

  • Celery (stalks only, no leaves): 1 lb 2 oz (500 g), cut into 1-inch (2.5 cm) pieces

  • Cauliflower florets: about 1 lb (450 g), cut into bite-size florets

Vinegar brine

  • Water: 4 cups (946 ml)

  • White wine vinegar (5% acidity): 4 cups (946 ml)

  • Pickling/kosher salt: 2 Tbsp (about 36 g)

  • Hot chili powder OR crushed red pepper: 1 tsp (2–3 g), plus more to taste

Optional (nice additions)

  • 2–3 garlic cloves, lightly crushed

  • 1–2 bay leaves

  • ½ tsp black peppercorns


Instructions

  1. Prep the vegetables.
    Wash everything well. Cut carrots, celery, and cauliflower as listed so they cook evenly and stay crunchy.

  2. Bring the brine to a boil.
    In a large pot, add water + vinegar + salt. Bring to a rolling boil.

  3. Blanch in stages for the perfect crunch (7 minutes total).

    • Add cauliflower florets: boil 3 minutes, then remove with a slotted spoon.

    • Add carrots + celery: boil 4 minutes, then drain.

  4. Stop the cooking (best crunch trick).
    Transfer veggies to a bowl of ice water for 2–3 minutes, then drain very well.

  5. Pack the jars.
    Fill clean jars (2 quart jars or 4 pint jars work well) with the vegetables.
    Add the chili powder/crushed red pepper (and optional aromatics) into each jar.

  6. Pour in the brine.
    Pour the hot brine over the vegetables until fully covered. Tap jars gently to release air bubbles. Top up with more vinegar if needed.

  7. Cool and refrigerate.
    Let jars cool to room temperature, then refrigerate.
    Best after 12–24 hours (flavor gets even better).


Tips and Tricks

  • Follow the cook times. Even if it feels short, that’s how you keep the vegetables crunchy.

  • Vinegar helps the “al dente” bite. If the veggies turn soft, they were likely overcooked or sat warm too long.
