½ cup (100 ml) rice oil or sunflower oil
¾ cup (150 g) sugar (or brown sugar)
1 cup (120 g) all-purpose flour (or white spelt flour)
1 tsp baking powder
Grated zest of 1 lemon
2 tsp limoncello liqueur
Powdered sugar, to garnish

1. Mix Oil & Sugar:
In a mixing bowl, combine the oil and sugar. Stir with a whisk or wooden spoon until creamy.
2. Add Lemon Zest & Limoncello:
Grate in the lemon zest and add the limoncello. Stir again.
3. Incorporate Eggs:
Add the eggs one at a time, mixing well after each addition.
4. Fold in Dry Ingredients:
Sift in the flour and baking powder. Stir until smooth and fully combined.
5. Bake:
Pour the batter into a 9×7 inch (24×18 cm) baking pan lined with parchment paper.
Bake in a static oven at 350°F (180°C) for 20–25 minutes. For fan ovens, bake at 340°F (170°C).
6. Cool & Serve:
Let the cake cool, then cut into squares and dust with powdered sugar before serving.

You can swap the oil for 130 g (1 stick + 1 tbsp) butter if preferred.
