2 kg fresh mussels (about 4.4 lbs), cleaned
2 cloves garlic, whole or crushed
4 tbsp extra virgin olive oil
100 ml dry white wine (about ⅓ cup + 1 tbsp)
1 cup cherry tomatoes, halved
1 small chili pepper (optional, for heat)
1 bunch fresh parsley, finely chopped
Salt, only if needed (mussels are naturally salty)
4 slices crusty bread, toasted (for serving)
Instructions
Clean the Mussels
Scrub the mussels under cold water, remove the beards, and discard any that are cracked or do not close when tapped.Sauté the Aromatics
