NONNA’S ZABAIONE CREAM (ZABAGLIONE)

A Sweet Embrace from the Past — Spoonfuls of Love, Memory, and Marsala

In Nonna’s kitchen, every recipe was more than food — it was a story, a memory, a way to say “I love you” without saying a word.

One of the most nostalgic Italian desserts, Zabaione (or Zabaglione), was a staple of Sunday lunches, festive tables, and after-school treats — a creamy custard made simply from egg yolks, sugar, and a splash of Marsala wine.

This velvety custard was once a resourceful way to turn humble ingredients into something magical.

In our home, it was often served warm in little cups with ladyfingers or savoiardi biscuits for dipping. My grandmother used to beat the eggs by hand with a wooden spoon until the cream turned pale and airy. No mixer, no shortcuts — just love.

  • Cook Time: 5 minutes

  • Servings: 4

  • Difficulty: Very Easy

  • Cost: Very Inexpensive

  • Cooking Method: Stove (double boiler preferred)

  • Cuisine: Traditional Italian

🛒 Ingredients

  • 4 egg yolks

  • ⅓ cup (80 g) granulated sugar

  • ¼ cup (60 ml) dry Marsala wine

👩‍🍳 Method – Step by Step

  1. Whisk the Eggs & Sugar
In a heatproof bowl or the top of a double boiler, combine the egg yolks and sugar. Beat with a handheld mixer (or a wooden spoon, like Nonna!) for about 4–5 minutes until the mixture becomes pale, thick, and fluffy.

  2. Add the Marsala Wine
Gradually pour in the Marsala, continuing to whisk until fully incorporated.

  3. Cook Gently Over Heat
Place the bowl over a pot of simmering water (make sure the bottom doesn’t touch the water). Cook gently, whisking constantly, for about 5 minutes or until the cream thickens and coats the back of a spoon.

  4. Serve Immediately
Pour the zabaione into ramekins or small dessert cups. Serve warm, at room temperature, or chilled — with ladyfingers, biscotti, or fresh berries.

💡 Nonna’s Tips & Tricks

  • 🔁 No Marsala? Substitute with sweet wine like Moscato or a splash of espresso for a non-alcoholic version (like we did for the sbatudin).

  • ❄️ Make Ahead: Store chilled for up to 2 days. Re-whisk gently before serving.

  • 🍦 Upgrade It: Fold in lightly whipped cream for a mousse-like texture.

  • 🍫 Chocolate Lover? Add a teaspoon of cocoa powder for a mocha zabaione.

  • 🍓 Pair It With: Strawberries, poached pears, or crumbled amaretti cookies.
