OLD-FASHIONED MASCARPONE CREAM

A Timeless Italian Classic

The Mascarpone Cream (Crema al Mascarpone) is one of the most beloved and versatile desserts in Italian pastry.

It’s rich, smooth, and irresistibly creamy — the kind of recipe that instantly transports you to an Italian holiday table surrounded by family, laughter, and the scent of fresh espresso.

This cream is most famous as the heart of Tiramisù, but Italians also love to enjoy it simply by the spoonful or as a decadent spread over slices of Pandoro or Panettone during Christmas.

And once you taste it, you’ll understand why it’s a dessert that never goes out of style.

The Secret of the Perfect Mascarpone Cream

A Holiday Staple You’ll Want All Year Round

While this cream is a must-have at Christmas, it’s far too delicious to make only once a year.

Whether you use it to fill a sponge cake, accompany fresh berries, or layer it into trifles, this Mascarpone and Whipped Cream Dessert will add a luxurious touch to any occasion.

A Light and Fluffy Twist

Traditionally, mascarpone cream is made with whipped egg whites, but in my version, I use fresh heavy cream instead. The result is even better — a lighter, airier, and silkier texture with a perfectly balanced flavor.

The whipped cream helps stabilize the mascarpone, creating a dessert that’s both elegant and foolproof.

Trust me: once you try this version, you’ll never go back. Adults love it, kids adore it, and it’s the kind of recipe that disappears as soon as you put it on the table!

🕒 Cooking Information

  • Prep Time: 15 minutes

  • Chill Time: 1 hour

  • Difficulty: Easy

  • Servings: About 6

🧁 Ingredients

  • 1 ¼ cups (10 fl oz / 300 ml) cold heavy whipping cream

  • 8.8 oz (250 g) mascarpone cheese, cold

  • 2 large egg yolks (about 1.4 oz / 40 g)

  • ⅓ cup + 1 tbsp (2.5 oz / 70 g) granulated sugar

👩🏻‍🍳 Instructions

  1. Whip the Cream
In a large mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overbeat it. Transfer to the refrigerator to keep cool while preparing the rest.

  2. Beat the Egg Yolks and Sugar
In another bowl (or the bowl of a stand mixer), combine the sugar and egg yolks. Beat with an electric mixer until the mixture becomes pale, thick, and fluffy — this should take about 4–5 minutes.

  3. Add the Mascarpone
Add the mascarpone cheese to the yolk mixture. Continue beating at low speed until smooth and creamy. The mascarpone should start to whip up, becoming slightly airy and light.

  4. Incorporate the Whipped Cream
Using a rubber spatula, gently fold the whipped cream into the mascarpone mixture with slow movements from bottom to top. This will keep the cream light and fluffy.

  5. Adjust the Texture (Optional)
If you prefer a firmer cream (for example, to fill a cake), briefly mix the finished cream again with the mixer for a few seconds. Don’t overmix — or the cream may curdle.

  6. Chill and Serve
Cover and refrigerate for at least 1 hour before serving. This allows the cream to firm up slightly and develop its delicate flavor.

🍮 Tips & Tricks

  • For a thicker cream: Whip slightly longer at the end, but stop as soon as the cream thickens.

  • Serving ideas: Spoon it into dessert glasses, layer it with ladyfingers, or serve it with fresh strawberries or panettone.

  • Make ahead: The cream can be made up to 24 hours in advance and stored in the refrigerator, covered.

  • Avoid overbeating: Overmixing mascarpone can cause it to separate — always use gentle movements.
