Ingredients

For the Crumb Dough

  • 1 ¾ cups all-purpose flour

  • ½ cup cold unsalted butter, cubed or coarsely grated

  • ¼ cup powdered sugar (or granulated sugar)

  • 1 teaspoon baking powder

For the Ricotta Filling

  • 1 cup whole-milk ricotta cheese

  • 2 large eggs

  • 1 cup granulated sugar

  • Zest of 1 lemon (yellow part only)

  • 2 tablespoons fresh lemon juice, strained

  • 3 tablespoons potato starch (or cornstarch)


Instructions

  • Prepare the crumb dough:
    In a large bowl, mix the flour, baking powder, and powdered sugar. Add the cold butter and rub it into the dry ingredients using your fingertips until coarse crumbs form. Do not overwork. Refrigerate the crumbs while you prepare the filling.

  • Prepare the ricotta:
    If the ricotta is grainy, pass it through a sieve or blend briefly with an immersion blender until smooth.

  • Flavor the filling:
    Add the lemon zest and strained lemon juice to the ricotta.

  • Add eggs and sugar:
    Stir in the granulated sugar, then add the eggs.

  • Thicken the filling:
    Mix well, then add the potato starch (or cornstarch) until smooth and creamy.

  • Prepare the pan:
    Butter and flour a rectangular baking pan, or line it with parchment paper leaving overhang for easy removal.

  • Assemble the base:
    Sprinkle half of the crumb mixture evenly over the bottom of the pan, pressing very lightly.

  • Add the filling:
    Pour the ricotta mixture over the crumb base and spread evenly.

  • Top with crumbs:
