For the Soup:

  • 1 cup dried borlotti (or red) beans (soaked overnight)
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion (sliced into strips)
  • 1 cup tomato puree
  • 2 tablespoons homemade chili oil (or 1 teaspoon chili powder)
  • 2 cups bean cooking water (reserved from boiling beans)
  • Salt (optional, to taste)

Step 1: Prepare the Beans

1️⃣ Soak the beans in water for at least 12 hours. Drain and rinse before cooking.
2️⃣ Cook the beans in a pressure cooker for about 30 minutes (or simmer in a regular pot for 60-75 minutes). Save the cooking water!

Step 2: Make the Bean Puree

3️⃣ Take 1 cup of the cooked beans and blend them with some reserved bean cooking water until smooth. This will give the soup a creamy consistency.

Step 3: Make the Base

4️⃣ Heat 1 tablespoon of olive oil in a nonstick pan and sauté the sliced onion until soft.
5️⃣ Add tomato puree and a pinch of salt, then cover and simmer for 20 minutes, stirring occasionally.

Step 4: Assemble the Soup

6️⃣ Add the whole cooked beans, the bean puree, and the chili oil (or chili powder) to the pan.
7️⃣ Stir and let simmer for another 10-15 minutes, adding more bean cooking water as needed to reach your desired consistency.
