Notes

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • ½ cup caster sugar
  • 2 ½ tablespoons lemon juice
  • 1 ½ teaspoons baking powder
  • 1 egg (about 1 ⅓ tablespoons)
  • ⅓ cup seed oil (or olive oil)

For the Surface:

  • Lemon juice, to taste
  • Granulated sugar, to taste

Method

Prepare the Dough:

  1. Mix Dry Ingredients:
In a large bowl, combine the flour and baking powder. 🥄
  2. Mix Wet Ingredients:
In a separate bowl, whisk the egg and sugar together until well combined. Add lemon juice and oil to the mixture and stir. 🍋
  3. Combine Wet and Dry Ingredients:
Gradually add the wet ingredients to the dry mixture. Use a fork to mix until combined, then knead with your hands to form a dough. The dough will be slightly sticky but don't worry—no more flour is needed! 🤲

Shape and Bake:

  1. Shape the Cookies:
With floured hands, take small portions of dough and shape them into biscuits. Arrange them on a baking sheet lined with parchment paper, leaving space between each cookie. 🍪
  2. Add Lemon and Sugar:
Brush each biscuit with lemon juice and sprinkle granulated sugar over the top. 🍋
  3. Bake:
Preheat the oven to 350°F and bake the biscuits for about 15 minutes. The biscuits should be light in color and crispy on the outside. 🍽️

Serve:

  1. Cool and Serve:
Once baked, remove the biscuits from the oven and allow them to cool on a wire rack. Serve with your favorite hot beverage and enjoy! ☕🍪
