A Warm Hug from Liguria: The Story Behind Minestrone alla Genovese
Few dishes capture the heart of Ligurian cuisine quite like Minestrone alla Genovese. Born in the city of Genoa, this traditional vegetable soup is a celebration of simplicity, freshness, and seasonality.
Every bowl tells the story of a cuisine built on the bounty of the Italian Riviera — where humble ingredients like beans, potatoes, and garden vegetables transform into something rich, nourishing, and deeply comforting.
In Liguria, minestrone is not just soup — it’s a tradition passed from nonna to nipote (grandmother to grandchild), a recipe that changes with the seasons and whatever the garden provides.
Some add cabbage and peas in winter, zucchini and eggplant in summer.
What remains constant is the soul of the dish: a slow-simmered medley of vegetables, made creamy by time and love, and finished with a swirl of pesto genovese — that fragrant blend of fresh basil, Parmigiano Reggiano, garlic, and pine nuts that defines the region.
The Charm of the Genoese Minestrone
Unlike other Italian soups, Minestrone alla Genovese often becomes creamy without the need for cream or butter.
This comes from long cooking, which gently breaks down the vegetables and melds their flavors into a silky, thick broth.
Traditionally, a small amount of rice or short pasta is added near the end, giving the soup body and comfort — a complete meal in one bowl.
Served hot in winter or cool in summer, and always finished with a drizzle of extra-virgin olive oil and a generous spoonful of pesto, this dish is the taste of home in every season.

💡 Tips & Tricks
Seasonal swaps: Use whatever vegetables are in season — spinach, kale, or peas make wonderful additions.
Texture control: For a creamier soup, blend about ⅓ of the mixture before adding the pasta or rice.
Make ahead: Minestrone tastes even better the next day as the flavors continue to develop.
Vegan version: Omit the Parmigiano Reggiano and use vegan pesto.
