Neapolitan Chocolate Hazelnut Nougat (Torrone dei Morti)

Neapolitan Chocolate Hazelnut Nougat (Torrone dei Morti)

A traditional Neapolitan sweet prepared for All Souls’ Day, this rich and creamy Torrone dei Morti brings the flavor of Naples straight into your kitchen. Back home, you find it in every pasticceria during this season — a glossy dark chocolate shell filled with a velvety mix of chocolate, hazelnut cream, and whole toasted hazelnuts.

Legend says that on this day, the spirits return to share the food prepared for them, and over centuries, this ritual gave birth to treats like this one.

Whether you follow the tradition or simply adore chocolate, this homemade version is incredibly easy — even far from Italy.

Grab your loaf pan, some chocolate, and hazelnuts… and let’s make a piece of Naples together.

⭐ Ingredients (Makes 8 servings)

  • 5 oz dark chocolate, melted

  • 5 oz milk chocolate (or white or dark), melted

  • ¾ cup hazelnut spread

  • 5 oz whole toasted hazelnuts, skins removed

👩‍🍳 Instructions

  1. Melt the Chocolate
Melt all the chocolate (dark + milk) in a double boiler until smooth.

  2. Create the Chocolate Shell
Pour half of the melted chocolate into a loaf pan.
Tilt and rotate the pan so the chocolate coats the bottom and sides (about 1½ inches high).
Refrigerate for 10 minutes, until set.
This will form the glossy shell of your nougat.

  3. Prepare the Filling
Mix the hazelnut spread into the remaining melted chocolate.
Add the whole hazelnuts and stir until fully coated.
Pour this mixture inside the chocolate shell, level the top, and tap the pan to release air bubbles.

  4. Chill
Refrigerate for 2 hours, or until completely firm.

  5. Unmold & Serve
Run a sharp knife along the edges, then flip the pan with one firm tap.
    Slice and enjoy!

💡 Tips & Tricks

  • Use quality chocolate for a shinier shell and better flavor.

  • Chill the empty loaf pan for 5 minutes before coating for extra gloss.

  • Add chopped nuts, pistachios, or crushed wafers for extra crunch.

  • Store covered in the fridge for up to 1 week.
