Nonna's First Courses Pasta

PASTA ALLA FRANCESCANA (Italian Creamy Meat & Mushroom Pasta)

If you grew up in an Italian or Italian-American household, you know there are certain dishes that carry a kind of magic—those weeknight meals that came together in one pan, filled the whole kitchen with irresistible aromas, and made everyone rush to the table before Nonna even called. Pasta alla Francescana is one of those recipes.

This creamy, hearty pasta dish comes straight from classic Italian home cooking: a rich meat sauce made with mushrooms, soffritto, tomato, and cream, all wrapped around perfectly al dente pasta.

It’s rustic, comforting, and deeply satisfying—without being complicated. It feels like something that simmered on the stove for hours, yet it comes together in under an hour.

Whether you’re cooking for family, hosting friends, or simply craving a bowl of old-school Italian comfort, this pasta delivers every single time.

Tips & Tricks

  • For a richer flavor, replace the beef with Italian sausage — but choose good-quality sausage to elevate the dish.

  • Choose durum wheat pasta shapes with ridges that cling to the creamy sauce:

    • Penne rigate

    • Casarecce

    • Rigatoni

    • Paccheri

  • Keep the pasta slightly al dente so it holds up well to the creamy, hearty sauce.

  • Add a pinch of chili flakes if you like a little heat.
