This Flourless Pistachio Cake is wonderfully moist, rich, and naturally packed with nutty flavor.
Made with ground pistachios and almonds instead of flour, it has a tender, slightly dense crumb that stays deliciously soft for days.
There’s no flour and no butter in the batter—just nuts, eggs, brown sugar, and a splash of rum.
For an extra-special finish, you can add a drizzle of dark chocolate and chopped pistachios, just like in the photo.

Recipe Details
Servings: 8–10 slices
Prep Time: 15 minutes
Cook Time: 55–60 minutes
Total Time: About 1 hour 15 minutes
Baking Temperature: 320°F (160°C)
Pan: 9 x 5-inch loaf pan
Ingredients
For the Pistachio Cake
- 1¼ cups (150 g) blanched almonds
- About 1⅔ cups (200 g) shelled unsalted pistachios
- ¼ cup (50 g) brown sugar
- 4 large eggs, room temperature
- 1 tablespoon (15 ml) dark rum
Optional Topping
- 2 oz (55 g) dark chocolate
- 2–3 tablespoons chopped pistachios
Instructions
1. Prepare the Pan
Preheat the oven to 320°F (160°C).
Line a 9 x 5-inch loaf pan with parchment paper, leaving a little overhang on the sides so the cake will be easier to remove.
2. Grind the Nuts
Place the almonds, pistachios, and brown sugar in a food processor.
Pulse until the nuts are finely ground and have a texture similar to coarse almond flour.
Do not process for too long or the nuts may begin releasing their oils and turn into nut butter.
3. Whip the Eggs
Place the eggs in a large mixing bowl.
Using an electric mixer, beat them for about 5–7 minutes, until pale, thick, and very fluffy.
Add the rum and mix briefly to combine.
4. Add the Pistachio Mixture
Gradually add the ground pistachio and almond mixture to the whipped eggs.
Using a spatula, gently fold everything together until evenly incorporated. Avoid overmixing so you retain as much air as possible.
5. Bake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for approximately 55–60 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
If the top is browning too quickly, loosely cover it with aluminum foil during the final 15 minutes.
6. Cool
Remove the cake from the oven and allow it to cool in the pan for about 15 minutes.
Lift it out using the parchment paper and transfer it to a wire rack to cool completely.
7. Optional Chocolate Pistachio Topping
Melt the dark chocolate gently in the microwave or over a double boiler.
Drizzle it over the completely cooled cake and immediately sprinkle with chopped pistachios.
Allow the chocolate to set before slicing.
Nonna’s Tips
🌰 Use unsalted pistachios. Salted roasted pistachios can overpower the delicate flavor of the cake.
🥚 Whip the eggs very well. Since there is no flour or baking powder, the air incorporated into the eggs helps give the cake its structure.
💚 Don’t over-process the pistachios. Pulse them just until finely ground.
🍫 Chocolate is optional but delicious. Dark chocolate pairs especially well with pistachios and gives the cake a beautiful bakery-style finish.
☕ Serve it Italian-style. A thin slice is wonderful with espresso, cappuccino, or an after-dinner coffee.
Variations
For a rum-free version, replace the rum with 1 tablespoon of milk, orange juice, or 1 teaspoon vanilla extract.
For a more aromatic Sicilian-style cake, add finely grated orange or lemon zest.
You can also dust the cooled cake simply with powdered sugar instead of using chocolate.
Storage
Keep the cake in an airtight container at room temperature for 2–3 days, or refrigerate it for up to 5 days.
Bring refrigerated slices to room temperature before serving for the best texture and flavor.
The cake can also be frozen, well wrapped, for up to 2 months.
