CALABRIAN POTATOES WITH PEPPERS AND EGGPLANT

There are some dishes that don’t need complicated ingredients to taste unforgettable. Calabrian Potatoes with Peppers and Eggplant is one of them.

This rustic Southern Italian recipe brings together golden potatoes, sweet peppers, tender eggplant, onion, garlic, oregano, and extra virgin olive oil in one deeply flavorful skillet.

In Calabria, dishes like this are often served as a hearty side dish, but with a piece of crusty Italian bread, they can easily become a simple meal on their own.

The key is cooking the vegetables in stages so each one keeps its texture before everything comes together at the end.

Servings

Serves: 4

Cooking Time

  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour

Ingredients

  • 1½ pounds (700 g) potatoes
  • 1 large eggplant
  • 2 large bell peppers, preferably 1 red and 1 yellow
  • 1 medium onion, thinly sliced
  • 1 garlic clove
  • 5–6 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon fine sea salt, or to taste
  • Freshly ground black pepper, to taste
  • Crushed Calabrian chili pepper, optional
  • Fresh basil leaves, optional

How to Make Calabrian Potatoes with Peppers and Eggplant

1. Prepare the Vegetables

Peel the potatoes and cut them into medium-size wedges or chunks.

Cut the eggplant into approximately 1-inch pieces.

Remove the stems, seeds, and white membranes from the peppers and cut them into large strips or chunks.

Thinly slice the onion.

If your eggplant is particularly bitter, sprinkle the pieces with salt and let them drain in a colander for about 20–30 minutes. Rinse and pat them completely dry before cooking.

For most modern eggplants, this step is usually unnecessary.

2. Cook the Potatoes

Heat about 3 tablespoons of extra virgin olive oil in a large skillet over medium heat.

Add the potatoes and cook for about 12–15 minutes, turning occasionally.

They should begin to brown and become slightly tender but should not be completely cooked through.

Transfer the potatoes to a plate and set aside.

3. Cook the Eggplant

Add another tablespoon of olive oil to the same skillet.

Add the eggplant and cook over medium-high heat for about 8–10 minutes, stirring occasionally.

The eggplant should become golden on the outside and tender inside.

Transfer it to the plate with the potatoes.

4. Cook the Peppers

Add the remaining olive oil to the skillet.

Add the sliced onion and garlic and cook for about 2 minutes, until fragrant.

Add the peppers and cook for approximately 8–10 minutes.

The peppers should soften but still retain some texture.

5. Combine Everything

Return the potatoes and eggplant to the skillet.

Season with:

  • dried oregano
  • salt
  • black pepper
  • crushed Calabrian chili pepper, if desired

Gently toss everything together.

Cook uncovered for another 8–10 minutes, stirring carefully, until the potatoes are completely tender and all the vegetables are nicely browned.

6. Let It Rest

Remove the skillet from the heat and let the vegetables rest for about 5–10 minutes.

If desired, finish with a few fresh basil leaves.

Serve warm, at room temperature, or even cold.

Nonna’s Tips

Cook the Vegetables in Stages

Avoid putting everything into the skillet at once.

Potatoes, eggplant, and peppers cook at different speeds, so cooking them separately at first helps preserve their texture.

Do Not Cut the Vegetables Too Small

Rustic, larger pieces work best.

Small pieces tend to break apart during cooking.

Use Good Extra Virgin Olive Oil

This is a simple dish, so the flavor of the olive oil really matters.

Do Not Overcook the Peppers

The peppers should be soft but still hold their shape.

Let the Dish Rest

This dish tastes even better after it sits for 15–20 minutes, allowing the vegetables to absorb all the flavors.

Variations

Add Tomatoes

Add 4–5 chopped cherry tomatoes during the final 10 minutes of cooking for a slightly saucier version.

Make It Spicier

Add sliced fresh Calabrian chili peppers or a spoonful of Calabrian chili paste.

Add Fresh Herbs

Fresh basil or parsley can be added just before serving.

Serve with Bread

Serve with crusty Italian bread to soak up the flavorful olive oil from the bottom of the skillet.

How to Serve It

Calabrian potatoes with peppers and eggplant can be served as:

  • a side dish for roasted or grilled meats
  • part of an Italian antipasto spread
  • a vegetarian main course
  • a sandwich filling inside crusty Italian bread
  • a room-temperature summer dish

It is especially delicious alongside grilled sausage.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

For the best flavor, allow the dish to return to room temperature before serving, or gently reheat it in a skillet over medium-low heat.

Freezing is not recommended because the eggplant and peppers can become too soft once thawed.
