Pitta Salentina is a traditional potato pie from Salento, in the southern Italian region of Puglia.
Made with mashed potatoes, a savory tomato and onion filling, capers, and cheese, this rustic casserole is one of those comforting dishes that bring the whole family together.
Unlike a traditional pie, Pitta Salentina has no pastry crust. Instead, two layers of seasoned mashed potatoes surround a rich, flavorful filling.
As it bakes, the top develops an irresistible golden crust while the inside remains wonderfully tender.
This homemade variation uses sliced melting cheese instead of the more traditional cheeses, making it especially creamy and delicious. It’s the perfect dish for Sunday lunch, family gatherings, or a comforting weeknight dinner.

Ingredients
For the potato layers
6 medium potatoes (about 2 lb / 900 g)
2 large eggs
½ cup (50 g) freshly grated Parmigiano Reggiano
2 tablespoons extra virgin olive oil
ÂĽ cup (30 g) plain breadcrumbs, plus more for topping
Salt and freshly ground black pepper, to taste
For the filling
1 medium onion, finely chopped
1 can (14 oz / 400 g) peeled Italian tomatoes, crushed
2 tablespoons capers, rinsed and drained
5–6 slices of melting sandwich cheese (such as American-style cheese)
2 tablespoons extra virgin olive oil
A pinch of red pepper flakes (optional)
Salt and black pepper, to taste
2–3 oz (60–85 g) prosciutto crudo (optional)
For assembling
2 tablespoons breadcrumbs
1 tablespoon extra virgin olive oil
A little olive oil for greasing the baking dish
Step-by-Step Instructions
1. Boil the potatoes
Wash the potatoes and place them in a large pot of salted water. Bring to a boil and cook for approximately 20–30 minutes, or until completely tender when pierced with a fork.
Drain, allow to cool slightly, peel, and mash until smooth. Set aside to cool until warm, not hot.
2. Prepare the tomato filling
Heat 2 tablespoons of extra virgin olive oil in a skillet over medium heat.
Add the chopped onion and red pepper flakes, if using. Sauté for about 5 minutes until softened.
Add the crushed tomatoes, season with salt and pepper, and cook for 15–20 minutes, stirring occasionally, until the sauce thickens.
Stir in the capers during the final few minutes. Remove from heat and allow to cool slightly.
3. Prepare the potato mixture
Transfer the mashed potatoes to a large bowl.
Add the eggs, grated Parmigiano Reggiano, olive oil, breadcrumbs, salt, and black pepper.
Mix thoroughly until you have a smooth, soft, and workable potato mixture.
4. Assemble the Pitta Salentina
Preheat the oven to 350°F (180°C), conventional/static setting.
Lightly grease a medium baking dish (approximately 8 Ă— 10 inches / 20 Ă— 25 cm) with olive oil and sprinkle with a little breadcrumbs.
Spread half of the potato mixture evenly across the bottom, pressing gently with a spoon or spatula.
Spoon the tomato and caper filling over the potato layer, leaving a small border around the edges.
Arrange the cheese slices evenly over the sauce. Add pieces of prosciutto crudo if using.
Cover with the remaining potato mixture and smooth the surface carefully.
5. Create the golden crust
Sprinkle the top generously with breadcrumbs and drizzle with extra virgin olive oil.
For a rustic appearance, use a fork to create light decorative lines across the surface.
6. Bake until golden
Place the baking dish on the middle rack and bake for approximately 35–40 minutes, until the surface is beautifully golden brown and slightly crisp.
For a deeper golden crust, use the broiler/grill setting for the final 2–3 minutes, watching carefully to prevent burning.
7. Let it rest and serve
Remove the potato pie from the oven and let it rest for at least 15–20 minutes before slicing.
This resting time allows the layers to firm up and helps produce neat, beautiful slices.
Serve warm or at room temperature.
Nonna’s Tips
Choose the right potatoes: Starchy potatoes, such as Russets, work particularly well and help create a soft but structured filling.
Keep the tomato sauce thick: Too much liquid can make the potato layers soggy.
No olives? No problem! Capers alone give the filling a wonderful Mediterranean flavor.
Extra creamy filling: Sliced melting cheese creates a deliciously gooey center. For a more traditional version, use caciocavallo or another firm Italian melting cheese.
Make it ahead: Pitta Salentina tastes even better after resting because the flavors have time to develop.
Leftovers: Refrigerate in an airtight container for up to 3 days and reheat in the oven until piping hot.
