The Soul of Ligurian Cuisine in a Jar
Genovese Pesto is one of Italy’s most treasured culinary creations, born in the sunny coastal region of Liguria.
This vibrant green sauce blends fresh basil leaves, pine nuts, garlic, aged cheeses, and extra virgin olive oil into a creamy, aromatic condiment that captures the essence of Italian summer.
With roots tracing back to ancient Roman herb pastes, modern-day pesto represents more than just flavor—it’s a symbol of simplicity, quality ingredients, and generations of nonnas preserving their culinary heritage.
Whether paired with trofie pasta, layered in lasagna, or dolloped over grilled vegetables, this sauce is beloved across the globe.
This version is quick and accessible thanks to the use of an immersion blender, but it maintains the traditional flavor profile revered in Italian homes.

Cooking Time & Details
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes
Servings: 6 (makes about 1 cup of pesto)
Ingredients
2 ¾ cups (about 2.5 oz) fresh basil leaves, tightly packed
2 tbsp pine nuts (1 oz)
⅔ cup grated Parmigiano Reggiano cheese (2 oz)
¼ cup grated Pecorino Romano cheese (1 oz)
½ cup extra virgin olive oil (4 oz), divided
1 garlic clove
Salt, to taste
Optional: 1 tbsp limoncello liqueur (adds a hint of citrus and brightness)
Method: Step-by-Step Instructions
Prep the ingredients: Rinse and dry basil leaves thoroughly to prevent bitterness. Peel the garlic clove.
Initial blend: In a tall container or blender cup, combine basil, pine nuts, garlic, Parmigiano, Pecorino, half of the olive oil, and limoncello (if using). Do not add salt yet.
Pulse the mixture: Using an immersion blender or regular blender, pulse the ingredients in 10–20 second intervals. In between blending, stir the mixture with a spatula to ensure even processing.
Add remaining oil: Slowly drizzle in the rest of the olive oil while continuing to blend until the pesto becomes smooth and creamy.
Adjust flavor: Taste and season with salt as needed.
Storage: Use immediately, or transfer to a clean glass jar, cover with a thin layer of oil on top, and refrigerate for up to 5 days. For longer storage, freeze in small jars or ice cube trays.
Tips & Tricks for the Perfect Pesto
Use young basil leaves: They’re more tender and less bitter.
Keep it cold: Blend in short bursts to avoid heating the basil, which can dull the flavor.
Optional cheese-free version: For a dairy-free pesto, substitute the cheeses with nutritional yeast.
Freeze for later: Pesto freezes well in ice cube trays — perfect portions for quick meals.
No pine nuts? Substitute with walnuts, almonds, or cashews.
