Ingredients

  • 2 cups (500 ml) milk
  • 3 whole eggs
  • 1/2 cup (100 g) sugar
  • 1/2 cup (100 g) all-purpose flour
  • 1/4 cup (30 g) unsweetened cocoa powder
  • Peel of 1 untreated lemon
  • 1/4 cup (50 ml) rum

Method

  1. Infuse the Milk: In a small saucepan, bring the milk to a boil along with the lemon peel. Once it reaches a boil, remove from heat and let it rest for a few minutes.
  2. Whisk the Eggs & Sugar: In a mixing bowl, whisk the eggs and sugar together until light and fluffy.
  3. Add Dry Ingredients: Gradually sift in the flour and cocoa powder, whisking continuously to avoid lumps.
  4. Combine Mixtures: Strain the warm milk to remove the lemon peel, then slowly pour it into the egg mixture, whisking constantly.
  5. Cook the Custard: Transfer the mixture back into a clean saucepan and cook over medium heat, stirring continuously until thickened (about 5 minutes).
  6. Smooth & Cool: Once the custard reaches a creamy consistency, remove from heat and whisk vigorously for a smooth texture. Cover with a damp kitchen towel and let it cool.
  7. Add Liqueur: When the custard is cold, whip it with the liqueur using a hand mixer or stand mixer until smooth and fluffy.
  8. Serve & Enjoy!
