Ingredients

For the Pasta

  • 400 g (14 oz) bucatini or thick spaghetti (linguine is preferred in my family)
  • 400 g (14 oz) fennel (wild if available)
  • 400 g (14 oz) fresh sardines, cleaned and deboned
  • 2 tbsp raisins, soaked and drained
  • 2 tbsp pine nuts
  • 1 glass of water
  • 1 onion, finely chopped
  • 4 anchovy fillets
  • ¼ teaspoon of saffron powder
  • 1 clove of garlic
  • 100 g (1 cup) breadcrumbs
  • Extra virgin olive oil, to taste
  • Salt and pepper, to taste

Instructions

1st Step: Prepare the Fennel

  1. Wash the fennel thoroughly, removing any tough stems.
  2. Boil the fennel in salted water for 10 minutes. Remove with a skimmer and set aside. Reserve the cooking water to cook the pasta later.

2nd Step: Clean the Sardines

  1. Remove the head, tail, and central bone from the sardines. Open them flat and set aside.

3rd Step: Make the Sauce

  1. In a large frying pan, sauté the onion and anchovy fillets in 2 tablespoons of olive oil over medium heat until softened.
  2. Add a glass of water and saffron, stirring to combine.
  3. Mix in the raisins, pine nuts, sardines, and fennel. Season with a pinch of pepper. Cover and let the flavors meld for 3 minutes over low heat.

4th Step: Toast the Breadcrumbs

  1. In a separate pan, toast the breadcrumbs with a drizzle of olive oil and a clove of garlic until golden and fragrant. Remove the garlic and set the breadcrumbs aside.

5th Step: Cook the Pasta

  1. In the fennel cooking water, boil the pasta until al dente.
  2. Drain the pasta and immediately add it to the pan with the sauce. Toss to coat evenly.

6th Step: Assemble and Serve

  1. Plate the pasta and sprinkle generously with toasted breadcrumbs.
  2. Drizzle with extra virgin olive oil and serve warm.
