This treat is enriched with a layer of caramel and pairs perfectly with jams or fresh fruit such as strawberries and blackberries.

Here’s how to prepare it step by step!

SERVINGS:8

The total cooking time for the flan is approximately 30 minutes in the oven.

INGREDIENTS:

  • 8 eggs
  • 33.82 fl. oz. milk (approximately 1 liter)
  • Sugar (8 tablespoons, 1 per egg)
  • Optional: Lemon zest or vanilla bean for added flavor
  • Caramel for lining the molds

Equipment:

  • Electric egg beater (recommended)
  • Pudding molds
  • 2 large casseroles for a water bath

INSTRUCTIONS:

Step 1: Heat the milk

  1. Heat the milk over very low heat.
  2. For more flavor, steep the milk with lemon zest or a vanilla bean while heating. Avoid boiling.

Step 2: Beat the eggs and sugar.

  1. Crack the 8 eggs into a large plastic bowl.
  2. Add 1 tablespoon of sugar for each egg (8 tablespoons total).
  3. Use an electric beater to mix the eggs and sugar for 10-15 minutes until well blended.

Step 3: Combine the milk with the egg mixture.

  1. Gradually pour the hot milk into the egg mixture, continuing to stir.
  2. Beat until the mixture becomes very frothy: this step is critical for the light texture of the flan.

Step 4: Preheat the oven.

  1. Preheat the oven to 180°C (356°F) .
  2. Prepare two casseroles by filling them halfway with hot water to create a water bath (bain-marie).

Step 5: Prepare the molds

  1. Pour a thin layer of caramel onto the base of each pudding mold.
  2. Fill the molds with the frothy egg-milk mixture, leaving some space at the top to prevent overflowing.
  3. Place the molds in the saucepans filled with water.

Step 6: Bake the flan

  1. Bake in the preheated oven for 30 minutes. The water bath will ensure even baking and prevent cracking.

Step 7: Cooling and chilling

  1. Remove the molds from the oven and allow them to cool to room temperature for 30 minutes.
  2. Once cooled, transfer them to the refrigerator and chill for at least 1 hour before serving.

Step 8: Serve and enjoy!

  • To serve, carefully unmold the flan onto a plate.
  • Add an extra drizzle of caramel to indulge.
  • Accompany with jam or fresh fruit such as strawberries, blackberries or blueberries for a refreshing touch.
  • Optional: Top with powdered sugar for an elegant presentation.
